Sweet Potato Cupcakes with Peanut butter frosting
2 Eggs
1 Cup Vanilla Protein powder
1 Cup sweet potato
2 tsp baking soda
4 Packs Trivia sweetener
Blend above ingredients together with a mixer and pour into nonstick muffin tins, bake at 350 for about 25-30 mins or until lightly brown on top.
Frosting topping
2 tbsp peanut butter
1/4 low fat cream cheese
1 tsp Vanilla extract
Blend with mixer and spread on top of the cupcake when cool.
Makes 18 cupcakes.
